Recipe from Ray, as served at the 2006 BBQ
400ml (1 2/3 cup) granulated sugar.
150 ml (2/3 cup) evaporated milk (Carnation)
30ml (2 tbsp) butter
500ml (2 cups) each - miniature marshmallows, and semi-sweet chocolate chips
5ml (1tsp) vanilla
LINE a 2 liter (8-inch) square baking pan with waxed paper, set aside.
COMBINE sugar, evaporated milk, and butter in saucepan. Bring to rolling boil over medium heat, stirring constantly; boil 4 minutes or until mixture starts to thicken. Remove from heat.
STIR in marshmallows, chocolate chips and vanilla until marshmallows and chocolate melt. Pour into prepared pan. Chill until set.
CUT into small squares ( 1" x 1" ) and store in refrigerator, (if they last that long). Makes 49 squares.
VARIATION: Stir 125ml (1/2 cup) chopped walnuts, pecans or dried fruit into melted chocolate mixture.
