2nd Anniversary Gumdrop Cake

Ingredients:

- 3/4 cup Evaporated Milk
· 1 cup Baking Gumdrops (*see note below)
· ½ cup margarine or butter
· ½ cup White Sugar
· 1 Egg
· 1 tsp Almond extract or Vanilla
· 1 cup All-purpose flour
· ½ tsp Salt
· 1 tsp Baking Powder .... (amended Oct 5/04)


Soak Gumdrops in evaporated milk for 15-30 minutes.

Cream margarine and sugar together.

Add Egg and Almond extract. Beat well.

Add Milk and Gumdrops. Mix in well.

Sift Flour, Salt and Baking powder into batter. Beat Well.

Spoon mixture into greased and floured 9" x 9" pan or Bundt pan.

Bake @ 350° for approx 30 - 35 minutes. (Time depends on your oven).

Cool on rack for 10 - 15 minutes, Remove from pan.

Can be served as is or, add a dusting of icing sugar or, an Almond flavored glaze.

* Note: If you can't find baking Gumdrops you can use regular gumdrops. Slice into 4's using scissors dipped in hot water. (CAUTION: remove all the Black gumdrops first. If they are left in the batter they will turn the batter black).

This is a lot more work --- but you get to eat all the black ones!!!
